My absolute favorite wine is Opus One but it is way too expensive for everyday drinking.

As much as living in California is stupid, we do have access to some great wine.
I live about 100 miles east of the Paso Robles area which produces wine to compare with any area in the world.
Hot days, cool night, it makes for great wine growing, especially big, bold reds.
My two favorite wineries in that area are Tobin James and Eberly. They both make great cabs, zinfandels, merlots, etc. They also produce what lots of folks think are great Syrah's, but I just do not like Syrah PERIOD.
My all time favorite is Tobin James Fat Boy, which is a limited release great zinfandel. At $55 a bottle, I seldom drink it, but it shows up in the wine club shipments and I get to drink at least one bottle a year.
Another varietal that I am buying more of as of late is Sangiovese.

Long list of decent Cabernet Sauvignons that I like. Sometimes a Pinot Noir and always a good Chianti with Italian food, or just for general drinking.
Whites/rose/blush etc are for chicks.

Mostly a good Cab or Malbec. I like Zinfandels for spicy food and a Pinot Noir if I'm in the mood for a really light wine.

Malbecs for a red (though I had a really good blend from Italy the other day)
Almost all Spanish whites. Especially Albarios (and their Portuguese equivalents).

Tough question -- kind of like asking what cartridges you like.
In this area of Washington state we have hundreds of wineries with some world class wines.
Five Star Cellars in Walla Walla has a good Sangiovese Fidelitas in Benton City has many outstanding reds Same with Terra Blanca winery.
I really like the 2011 Lemberger from Kiona winery at about $15/bottle

I usually like a nice Chateaubriand but lately I have found them very filling.

This... It goes great with wild game of all kinds. There are enough different good ones, all with different characteristics, there's Pinot for every taste. I like spice for venisons and berries for fowl.

Dry cabernet sauvignon. With steak.
Don't like whites/pinks- too sweet.
As Steelie said, Chianti is good too and I enjoy a dry Syrah.
I did some tasting in Woodinville, WA last weekend when my folks were in town and what I really enjoyed most was the Woodinville Whiskey Company distillery. I'll try not to hijack the thread but the short story is they found a way to repurpose used whiskey barrels- age maple syrup. You would not believe how good that is.
Back to wine, as Remington725 said, WA state has some really amazing wineries resulting from some really good grapes. At really good prices if you know what you like and can find a deal on it.
It's about like this:
"Do you puff peters?"
"Hell no!"
"NAZI!!!"

I spent the first 35 years of my life living 40 minutes from the Napa and Sonoma Valley's. Duckhorn Merlot is what I like best. Hard to find it in Oz but, then, there really is no reason to.

The last wine I had was Matilda bay, I took the bag out of the box so I could get every last drop.
