Me too. It's all in how the meat is cared for in the field.
If you get it on ice as quickly as possible (most antelope hunts are borderline hot weather hunts for us), it's by far my favorite big game. Agree 100%. Just had some lope fajitas for dinner. Great write up and nice animal - really enjoyed reading the entire thread.

Your photo reminds me of the other day when I was cooking fresh caribou backstrap for Tom and me. I did all the cooking except a few minutes after this. Tom enjoyed the backstrap so much he went and cooked four more steaks. The only thing I used for seasoning was sea salt. Yum, yum.

I think this picture is different.
I have the same feelings you have about gruesome photos guys post that are unnecessary, such as brain shot close-ups, guts, etc...
Like I say, this is different. It is "how it fell". It fell on a slight decline, head downhill. It pumped out blood quickly. Very much like a slaughter house would to insure quality meat.
Rick, nice hunt, nice report and nice goat. Also nice technique on making sure that missing a kill shot did mean a clean miss and not a wounding hit. Regarding the blood in the pic it appears to me there is a combination of arterial blood and venous blood (bright red vs darker one) interesting for me from the medical perspective and I can watch it with analytical eyes, not getting my feelings hurt. I do think posting gruesome pictures for the sake of it is tasteless, but I agree with this picture reflecting a specific situation, goat, open terrain, gun, etc.

I've been eating antelope for years and am not a big fan but I'd stand in line to taste some of Rick's recipes.

Get 'em in the cooler ASAP (just like with any game) and it's the best stuff in the World.
That's where most hunters go wrong. Ya gotta start processing ASAP. Skinned, parted or boned-out and on ice ASAP.
The dishes above are really simple. Simple, quality food is always the best. The Red Chile I made from the dried pods and is quite easy to do. Can't buy many products pre-made that approach doing it yourself. Bueno Foods Red Chile is pretty damn good and will work, but when tasted side-by-side with homemade, gets beaten.
Taco filling is simple:
Brown off the ground meat little diced onion and garlic to sweat Add some cooked potato or pinto beans Add some Powdered New Mexico Red Chile, Salt, Pepper
Mash it all together and there's your filling.
Heat a fry pan with 1/8" of vegetable oil in it to temperature. Put a couple of tablespoonfuls of filling in each uncooked corn tortilla. Fold in half and set in the pan, base down and hold it till it begins to crisp up. Then lay it on its side. Continue with as many tacos as you are wanting to make are done. Hold them in batches in the oven at 200 degrees till your done.
You'll have already diced some sweet onion, tomato, grated cheddar, and shredded some lettuce to build your taco.
It's not a taco unless you have some nice red chile sauce to spoon in.
Take the fried taco, add a little fresh onion and cheese. Spoon in some hot red chile, top with tomato and lettuce. Stuff your face!

Just made my first red chili last week with dried pods. Beats any I have been able to find in the stores.
I soaked it in water overnight, added a little garlic and oregano, blended it then brought it to a boil for a few minutes. I had to add some Hatch extra hot chili powder because the only pods available were mild. Good stuff on eggs and in soup too.
Thanks for the lesson on the tacos.
