A few years ago I spent 5 days in the heart of the Cockscomb basin Jaguar Preserve Belize (120,000 acres)on a research trip. I had to eat whatever our cooks prepared which was a lot of seafood. Grilled grouper was tolerable. I stomached a lot of refried beans and johnnie cakes that week.
