Well, not really sure at this moment. I live in the Midwest and hunt whitetails mostly, but planning a few mountain hunts in the future. So far I'm thinking a 22" barrel at 7# or a touch over, McMillan stock...SS M700.

22" #3 Broughton with a Hunter's Edge stock should get you there.

Since an SS700 is a component part, I would find a factory 7mm-08 stainless and order an Edge Mountain Rifle Stock. Cut it to 22" and tweak the trigger. If it won't shoot, it was worth a try, and you can trip the barrel for $75 or so.
Now with even more aplomb

If it won't shoot, it was worth a try, and you can trip the barrel for $75 or so. Pretty much what I did with this one, except its sitting in a Classic Edge. Started as a stainless SPS, sent to Kampfeld to cut the barrel @ 22.5", flute for bling and side bolt release and Shilen trigger, PTG Alum Oberndorf bottom metal. Shoots most anything well, 7 lbs 4 ozs all up.

A 22" factory sporter in an Edge, wearing about 14oz of scope/mounts, should come in around 7 1/4lbs or so.

I'd personally look hard at the KS barrel specs if going all out though I would go with a 22" barrel. With a factory barrel I'd follow the crowd with a 22" factory sporter, though I would look at the KS stock if buying a McMillan for it. (they will inlet for a short action)

Dicks SS special in a classic, 24" tube,6x42 went 7lb 10oz Faux Ti 260, BC, same scope, 6#12oz.

That was a good rig, albeit a bit of a full figured gal. I had the 7-08/243 conundrum and split the difference with the 260. It'll run just a hair inside a 7-08 162 Amax load and 105 Amax / 243 load. Don't think the 1:9 can stabilize the 140's but haven't monkeyed with it.
Course after all that, a 270 Montana lopped to 22" should finish out at 6 1/2# and is starting to get tempting.

1st Gen Ti 7MM-08, factory except for the PTG aluminum bolt shroud/firing pin. Here's one more. Classic Edge ADL, Brux #3 1-9", fluted & finished @ 22.5" Jewell, Talleys, Leupold Mark 2 3x9x40, Ti fluted bolt by Kampfeld. Jon Beanland built, 7 lbs 4 ozs. It shoots:)
