Had my welder/fabricator buddy build me a smoker this fall...have use it twice for pork ribs...one beer can chicken..boneless chicken tenders once...but today I made ground elk meatloaf using the recipe shown...didn't use cheddar..but shredded mozzerelli...I really surprised myself..was soooo good...used pear wood for fuel...which I have a good amount available..meatloaf was smokin' for 2 hrs 15 minutes @ 250-275*..yummy !! Here's a great place for info & videos on smokin'....have since given it a second coat of paint..all recycled parts used for the build...except new tires/wheels/casters/thermometer..firebox measures a 16" cube..cylinder was an old compressor tank..smoke stack was an old driveshaft..handles are old mine rail from a uranium mine in Moab..quality weld/fab job !! weighs about 175#... http://www.smokingpit.com/recipes/Bacon-Cheeseburger-Meatloaf.htm

Nice looking outfit. I've been looking for a tank to do something similar. I have trouble with getting a smoker to last more than 3 or 4 years. Seems like the bottom rots out on all my gas smokers. Bill

Ill ask a novice question, do you want baffles, or control of the flow of the smoke, or air to the fire?
If so, what works best?

If so, what works best? I get that bad boy plenty warm....350+ before starting to smoke..just using the chimney flapper and louver holes below fire pit...once fire is going good....wood for fuel may measure up to 3" in diameter...seams pear works good...still learning..have cherry..peach...some apple..lots of pear...
