Morel mushrooms are my favorite. has anyone here tried morels with moose? I know pine mushrooms should be soon, how about those?

Yes, we like morels with moose, but my favorite and the season is about to be on us, are shaggy manes. Breaded and fried they are hard to beat. Can't store them, they turn to black mush. But cooked first, and get whatever makes them turn to mush, and you can freeze them. I did sort of pickle them one time, with some olive oil and garlic. That was pretty good.

I've had Moose, and I've had Morels. The idea of putting the 'shrums in a Cognac sauce and topping Moose tenderloin puts my appetite into overdrive. Do it and report back pronto!!

You may want to be cautious about mixing shaggy manes with alcohol, some peopel have reactions.
(Whether the booze is in your cup or sauce doens't seem to matter)
