I poached mule deer testicles in butter (followed the Meateater episode) and thought they were awesome. I will say there's a second layer of chewy membrane that I will remove in the future. The meat inside is very tender and mild flavored. The texture and flavor reminded me of one of those Aidell's bacon & chicken sausages. If you ground them and packed them in a sausage casing, I bet you could fool someone. Too bad they don't make bucks with more nuts on them haha.

In the future, I'll probably try slicing them in to little discs and frying them in a pan if getting that second membrane off them proves to be a hassle.
