Merely pick the weekly winners of each NFL game. No spread; straight up. Then you put "confidence points" on each game. 16 points to the blowout - little points on the squeaker games.
We had a pool like that years ago at work, and I took the Cowboys over the Texans expansion team (it was the Texans first ever NFL game) as my most confident pick and the damn cowboys lost and knocked me out of the pool the first week.
