The same way they called Cali 60 seconds after the polls closed. There is plenty of data crunching going on, voter history, and polling that paints the picture.

For example, dipchit Deflave doesn't get it, he laughed at the early Virginia call. But he obviously just reacted to the numbers, and doesn't understand the underlying reality:

It was over before it started.

Point is, the experts know who reports, and when, and how they lean, and they are able to pretty accurately predict a state's results.
