The dogs I've had or seen working didn't really need much teaching, other than the basics, and once they see you drop a deer (or quail, or duck) and get up on it to give it a good sniff while you act all excited and pleased with them, they soon get the, um, point

You can teach them to point foxes or other critters too, the same way.

I haven't yet seen a dog that will retrieve deer though
