Geoduck neck, raw, sliced thin, has the snap and flavor of a slice of fresh brined cucumber.
My favorite is ceviche. Diced tomatoes, peppers, onion, lime juice, and raw minced geoduck.
Haven't dug them the last couple years. Good beaches are hard to come by and get access to.
Need to get on it. Kamo has had some on order for years. 🤔
