So we got to see the back rooms and kitchens of all the restaurants. Places run by Paki's and Chinese were the worst. The Chinese places would be too cheap to run the a/c so they would prop open the kitchen door and flies would be on everything. One day saw an old man squatting on the floor cutting up meat on a board. Open pans of meat covered in flies all over the floor. No Chinese food for me. By comparison, Japanese restaurants were spotless.


Our Marshal and his inspectors used to tell us which Chinese restaurants were clean and which ones to avoid.
