That way if I'm right the resulting 2.5 would be .5 fat. You have to allow for the lean that is in the fat. It works on paper but becomes inexact when you start feeding it through the grinder.

That works fine. It's the same as what I said about 3x the meat except its based on the total wt, not the lean meat part. 6= 1/2 doz.
