Pulled out a piece of bear loin from a NC hunt in November 2021.
Salt and Pepper and I to smoking hot cast iron pan to sear in bacon grease on all sides
Brushed with balsamic glaze and put into a pan.
Cooked until 130* and then coated with blueberry sauce I made last summer.
Back in the oven until it hit 145*. Let it rest for 10mins. Slice and eat.
Turned out awesome
