When I hauled lettuce from Imperial Valley California there was no "factory". It went straight from the pickers' hands in the fields to a cardboard box, 24 heads to a case, into a vacuum cooler, and straight into my refrigerated trailer. A 4-man loading crew could fill a 45 foot trailer with 700+ cases in less than an hour. In the off season those guys would travel to the midwest as a group, arm wrestling for big bucks in beer joints. Nobody would challenge them within several hundred miles of their home territory.
