I've been on excellent shoots in Argentina on two different trips, but in 2014 went to South Africa on an all-bird shoot. It was at LEAST as good as Argentina. There's a wider variety of doves/pigeons in the same huge numbers, along with a far wider variety of quail- and grouse-like upland birds, up to 3-pound guinea fowl. There were so many guineas that we hunted them drives much like a cross between British pheasant shoots and Midwestern U.S. field hunts.

We were there at the tail end of waterfowl season, and there weren't as many ducks and geese as there are during the peak of the season in RSA (or Argentina) but its easily possible to arrange the hunt's timing to include both upland birds and waterfowl.

The outfitting/guide service was:

They also have a Facebook page. The accommodations and food were equal to Argentina, which means excellent.
