I have a rolling pin identical to that. I don’t have any problems with it but I roll my pie crust out by putting it in a 13 gallon kitchen trash bag or a large rural king bag.
Once I get the crust flattened out I take a pair of scissors, cut around the perimeter and pull the top piece of bag off of the crust.
I then take and flip the crust, which is on the bottom piece of bag, onto the pie plate.
I then pull the bag off leaving the crust in the plate.
If making noodles, I usually just use a wooden rolling pin and a big wooden cutting board I have.
