Thanks for all the replies. I tried some more back strap yesterday.... I used a game meat marinade in the food saver marinade container... Vacuum sealed it for 24 hours then took a meat hammer to it. We were cutting it with a butter knife it was so tender. Some of the best I've had so far.

I've been using my uncles advice about cutting pork roast in the hamburger, close to a 50/50 split. Anyone try this, or found something better?
