Hands down the best game cookbook we've ever tried. This one should be in the kitchen for anyone who enjoys game (or just really good recipes).
America needs to understand that our troops are not 'disposable'. Each represents a family; Fathers, Mothers, Sons, Daughters, Cousins, Uncles, Aunts... Our Citizens are our most valuable treasure; we waste far too many.

I often wonder how recipes in "Slice" would work on store bought meat - you know, the kind that gets wheeled out from the "back room" on those metal gurneys? I will never know cause I usually bring home my own.

The recipes are all tested and “worked up” on wild game, so often have more fat and/or sweeter ingredients than many people would use on fattier domestic meat, since one of the major differences in the taste of game is a lack of sweetness due to normally being comparatively lean. But the recipes do work fine as-is on lean domestic meat, but with fatter meat there’s no need to add fat or sweeter ingredients.
For SAUSAGE SEASON, Eileen has worked out a fat ratio for using the recipes with beef rather than game, because several people requested it after buying the book.

I bought both "Slice of the Wild" and "Sausage Season" this year, and am extremely happy with both.
I too used slice of the wilds excellent guide to butcher my own deer this year, and I have an elk hanging in the garage right now that will get the same treatment tomorrow. Eileen's descriptions of how to care for your game from start to finish gave me a whole new outlook on doing it all myself.
"Sausage Season" has the most thought out and well explained directions on how to make your own sausage. I'm planning on making my first batch right after Christmas.
Thanks Eileen for the FANTASTIC books!
