I wind up with a lot of grind meat because I screw up cutting steaks a lot laugh.

I made a big batch of Pozole. It turned out really good. Good and spicy w no heartburn. Corn tortillas, avocado, sliced radishes and chopped cabbage to top it. It should be better tomorrow.

Butterflied some caribou backstrap, stuffed it with cream cheese, sauteed onions, peppers, mushrooms, and some fresh parsley. Wrapped it in some bacon and cooked to medium rare. Not too shabby!

2.4kg, 500*F for 30 minutes, leave in closed oven for 2 hours.
