John, I'm hoping the Fareway stores have it at times?

I read that site on the Odebolt sausage, that locker does our beef.

I may be one needs to get some while the supply lasts.

I have never made it myself, but in the potatis korv (potato sausage) that I have had in Sweden I can usually taste allspice and (I think) nutmeg in it.

Swedish Potato Sausage recipe

I can't vouch for this particular recipe, but it does have allspice and nutmeg in it, and I think it looks pretty good.

From the Evangelical Covenant Church of Albert City, Iowa (at one time, probably more Swedish than Sweden) cookbook:

POTATO BOLOGNA
3 lb. beef
4 lb. pork
6 c. potatoes, boiled and mashed
1 heaping T. salt or more
1 1/2 tsp. poultry seasoning
1 tsp. pepper
3 onions, ground
2 c. milk, boiled and cooled
8 casings
Mix and put in casings. Makes 8 bolognas.

John, by way of the spices, there is this recipe for SWEDISH MEATBALLS (also excellent - I once ate so many at a church meal that I broke out in hives)

2/3 c. fine bread crumbs (dried)
1/2 c. milk
1 egg, slightly beaten
2 T. onion (1 T. instant onion)
1/3 tsp. salt
1/8 tsp. allspice
1/8 tsp. ginger
1/8 tsp. cloves
1/8 tsp. nutmeg
1 lb ground beef
1/2 lb. ground pork
Not mentioned in the recipe, but as I remember, it adds a great deal if they are rolled in parsley flakes.

Peroutka's Meats in Antigo WI makes a wonderful potato sausage. Last week I ordered 40 lbs, which will be shipped frozen and this time of year arrives just fine.
