I've made spaghetti sauce for a long time and it's changed with my taste,kinda like my chili. There's a basic way that I make it,and a few spices that don't change....You'll need a mortar & pestal for the dry spices... 1- 14oz can of chopped.diced,or crushed tomatos. 1- 14oz can of tomato sauce 1- 8oz can of tomato sauce 4 cloves of chopped garlic simmer for 30 minutes then add... 1-tbsp basil 1-tsp onion powder 1-tsp oregano 1 tbsp fennel seeds 1-tsp red pepper flakes 1-tbsp olive oil salt and pepper to taste... simmer for at least 1 hour.... I've added vodka with during the first simmer with ok results...It somehow don't last long enough to get into the sauce...wierd <img src="/ubbthreads/images/graemlins/wink.gif" alt="" />. You could also add shallots...Shallots are always a good thing... Bart

lean ground round, tomato sauce or paste, jalape�os, onion, garlic, peanut oil, and whatever else strikes my fancy while I'm inventorying the possibilities that my kitchen offers � thyme, oregano, etc (but no sugar!)

Our favorite is fresco- very quick and easy; start with plenty fresh garlic, onion, in GOOD olive oil, cook awhile, add sweet peppers, chopped, add lots of romas, chopped, add chianti or other good table wine, italian sausage, chicken, veal or beef, game sausage works well, too. Add canned tomato. More olive oil acts as a thickener if you like to simmer awhile.Fresh mushrooms and many other veggies find their way in, depending... as opposed to many recipes, this can be ready to eat in an hour. We only eat fresh, homemade pasta, and this is just the best stuff I've ever put in my mouth.

Brown 1.25 lbs of ground venison or elk, drain and set aside...brown .5 lbs of bacon, crumble and set aside..in the bacon leavings cook one lg onion chopped, three ribs of celery chopped, one large bell pepper chopped, 5 cloves of garlic chopped, when translucent, add meat and bacon, and 1 can of tomato paste, one can of tomato soup, two cans of tomato sauce, 1.5 cups of red wine, 1 cup water, 1 cup of parmesean cheese, and simmer for 1 hour....taste for flavor and add salt, pepper, oregano, tarragon, basil, and a pinch of sage, another .5 cups of parmesean cheese and simmer for another 40 minutes....serve with pasta....

Lots o' ground beef. Sweet Italian sausage chunks. Garlic galore (minced or powder) Dried onion. Black pepper. I use Lawrey's Spaghetti sauce packets then add tomato suace. Mushrooms. Let simmer for as long as you can bear it (crock pot works well for this 3 hours on warm) Then add pasta. Good, soft bread and butter. A bottle of San Antonio Cardinale red wine.......mmmmmm.
