It was difficult to end up with 10 dozen small perfect oysters. I tend to have to sample a "few" as they come out of the shell. Right now the pacific oyster is at it's prime, the shells are full of sweet succulant meat. Even the larger oysters 3-4 inch are good fresh from the shell. They are almost to good to smoke. However My brother in outlaw wants some for Christmas. So I schucked a few dozen oysters and ended up with 10 dozen, might have started our with a gross (a dozen dozen) but some had to run through quality control. par boiled them to firm them up have them in a mild brine until the AM then a two to three hour smoke before canning. Smoked oysters are a favorite but I keep the recipie to my self....don't want Sitka Deer stealing it and howling about boiled oysters.

Boily Smoked canned oysters should travel well by mail... <img src="/ubbthreads/images/graemlins/grin.gif" alt="" /> Have never been able to find oysters that lasted long enough to get smoked around here! They just go away!!! art

Yeah that could happen, but at the moment I am sooooo full from all of those wonderfull fresh oysters I can only think about sending out packages....maybe later <img src="/ubbthreads/images/graemlins/grin.gif" alt="" />

Sorry Boggy but some one has to do it, the beaches would be nothing but oysters if we did not destroy them...cursed little devils they be. To make certain they are dead we must eat them, it is all about the enviroment you know and our duty to it. <img src="/ubbthreads/images/graemlins/grin.gif" alt="" />
