If I kill a small deer I roast the shoulders and hams whole. They are very good.

i never leave the leg bone on a hind quarter.i cut it off thru the joint so its basically round and can be wrapped easier. i like a tender young deer when cooking a whole quarter.

Hey Bob! That roast really looks good! I've never roasted any venison whole .

Those whitetails are pretty small, So I can see how you can do it.

Mule Deer and Elk quarters need to be broken down. I separate all the muscles and clean any sinew at the time I am processing.

Is your oven big enough to roast this? LOL

Hey Guys! It works pretty good and maybe like a leg of lamb?????

Rick there is no way I have anything to cook that hindquarter you have...... smile

You gotta shoot a small one to do what I did and that's what we had....a young doe. It worked pretty good!

Is that a mule deer or elk quarter?
