When I lived in BC, I was befriended by a family that cooked fish & chips every friday night. I had a standing dinner invitation.

Nay, it was the best too ! Ah, now I understand! When I read your first post above, I was wondering how you had picked up the habit of vinegar on the chips -- Canucks! When I lived in the USA, I sometimes got the strangest looks when I asked for vinegar for my fries. Vinegar on chips seems much more common in the UK and in Canada than in many parts of the USA John

All the fish n chip places on the coast put catchup and malted vinegar on the tables.
Got some rock cod I thawed out yesterday, gonna have that tonight. Caught it off the point out in front of Vandenburg.

It was a 5.5 lb flat did it at 230 degrees for 10 hrs till 195 degree internal temp
I prefer doing whole packers as you don't have to foil them I did't foil this one as I like to keep the bark from getting soft

We've been trying to eat healthy lately but I said to hell with it. I thawed out a chunk of deer loin. Sliced it up thick and pounded it thin with a meat mallet. seasoned, floured, fried in a skillet in bacon fat.baked some biscuits and made a milk gravy, green beans. Darn good meal.
