Ah my friend Sitka, your method may be ok for the fast food crowd, but adding all that seasoning and not cooking the oysters will just make the stew a mix of stuff with out any distinct flavor. Just milk boiled oysters and spices. Slow cooking infuses the entire dish with the essence of the oyster. Not just a splash and dash <img src="/ubbthreads/images/graemlins/wink.gif" alt="" />. But to each his own. Mine is simply better <img src="/ubbthreads/images/graemlins/grin.gif" alt="" /> Yes the oysters are cooked in my "STEW", that is why they call it stew not oysters in hot milk, is that some sort of bedtime dish <img src="/ubbthreads/images/graemlins/smirk.gif" alt="" /> I am certain your soup is tasty but to call it stew? Oysters must be cut and cooked a long time. There can be no other way to make "STEW". Small oysters are best eaten aunatural with a shot of Tabasco and chased with a cold beer. Use the big ones for true oyster "STEW" done my way, it's the best. Try it and you will agree. <img src="/ubbthreads/images/graemlins/smile.gif" alt="" />
Art as for my foopaw in saying Alge is the culpret for PSP oops. I knew it was zooplankton but I don't use that side of my brain often enough <img src="/ubbthreads/images/graemlins/shocked.gif" alt="" /> I have a friend here who was in the business of setting oyster spat. He used some plankton from Hawaii and pure salt water. The water was the trick as he had a well drilled that was saline, no bac-t, just salt water. The oyster seed flurished and he made big bucks, nice work if you can get it. Retired from investment made possible by his Oyster business. Now i build guns for him every now and again.
How long has there been oyster beds out of Soldotna? I know they were tried in SE but never took hold.

SSE, I fear not for my credibility, the demand for my oyster stew far exceeds it's production by a whole bunch. <img src="/ubbthreads/images/graemlins/laugh.gif" alt="" /> I am legandry in my own mind. Now i see a real problem in fact i would call it a dillema for you. You simply do not have enough oysters to make both mine and Sitkas stew. So how will you ever know which is best unless you just take my word and go for the cut oysters that are cooked properly, my way. <img src="/ubbthreads/images/graemlins/grin.gif" alt="" /> or you can blow the chance of the finest oyster stew you ever had unless you are lucky enough to get some of mine and make Sitka's oyster soup <img src="/ubbthreads/images/graemlins/tongue.gif" alt="" /> No matter how you choose don't let them "sters" go to waste.

A true kindofsewer like me gets the full essence in a hurry! <img src="/ubbthreads/images/graemlins/tongue.gif" alt="" />
Jackalof Bay, Seldovia, Halibut Cove and Bear Cove down in Katchamak Bay have had active oyster beds for at least 10 years. There are also beds established around Cordova, which I believe are native owned.

Boilwinkl - I would like to try your way, but...Doesn't the milk coagulate after such long term heat?? Also, don't you add the liquor from the jug to boost the oyster flavor??
You are definitely right about the oyster shortage. If it makes you feel better, jus go ahead and rub it in. My bro does every time I'm on the phone with him.

Why do I try to explane the dark arts of cooking to a inlander, might as well be walking on the sun....mmmm there is a song there... Well when your your oysters run out do not come crying to me I will just tell you to use "Rocky Mountain Oysters" lets see ya make a stew out of them. <img src="/ubbthreads/images/graemlins/grin.gif" alt="" /> But for a nominal fee there is a place not far from here that will ship ya fresh oysters if you are interested I will get you the addy.
