Last night I made grilled Pimento Cheese sandwich and Tomato soup.
I love Pimento Cheese....make it often but I always ate it on crackers for lunch until I ran across a recipe using it for grilled cheese's.
Holy crap...I don't know if I'll ever make a traditional grilled cheese again.
I put a little to much on so it was pretty messy if you like to dip your sandwich in the soup like I do but I won't make that mistake again.

It's basically cheddar, mayo, a little worchester, and pimento's.....pretty simple....here's the one I ran across....it's pretty close to mine cept I use sharp cheddar and throw in about 1/2 tsp. of cajun seasoning.

It's awsome......
That recipe suggested spreading Mayo on the out side instead of the butter I usually use for a grilled cheese so I gave it a try.
It tastes great and works just as well as butter...give it a try.
The whole mess is a heart attack looking for a victim but I don't plan on living forever.

Going down early tonight so all done.

Grilled marinaded (lime vinaigrette) flank steak, vege kabobs to include mini San Marzano tomatoes, with rice pilaf and Texas toast!!

Great hot rainy day supper. Thank you Lord!

BTW grilled pimento cheese anything rocks. Try it atop a broiled garden fresh tomato with bacon and panko!

Pimento Cheese is made with mayo so adding mayo to mayo would be mote wouldn't it?

And there are no "layers of cheese" to put the salsa between.
