Love the ultimate surf n turf. Finished off the last of last season's squirrel. Had a bag of little fryers set aside. Did an Italian recipe for rabbit. Brown the meat, stir up pretty much what you'd expect and bake for an hour at 375 w. some white wine and chicken stock.

Looking good Ella, squirrel is my favorite rodent.
I also have a soft spot for homemade ice cream.

thin sliced prosciutto wrapped around chunks of Pecorino cheese, lightly heated. Honey and roasted walnuts on the side.. Slices of Honeydew melon. Mixed baby greens with my raspberry vinaigrette.

We picked up two of our son's and their squeezes at the Spokane airport and I had put away a tray of lasagna in the freezer to deal with a simple meal upon arrival. That with garlic bread with a spread from a small local restaurant and a salad of greens, reds and spinach, tomatoes, cukes and bellpeppers from the farmers market. Washed down with Hamm's beer, well what could be better?

Haven't had Hamm's in ages. Gazpacho, marinated steak, fried garden peppers stuffed w. cheese. The soup turned out a weird color as I was just throwing in what was around. Tasted good though.

Trying to clean out the freezer a little. And had a backlog of eggs and peaches. Maybe better suited for a colder evening--Baked Pancake—I’ve heard it called Dutch or German pancake. • 6 eggs • 1 cp buttermilk • 1 cp flour • 3 tblsp butter • fruit 1. Preheat oven to 450F with the skillet inside 2. Fry fruit until lightly brown 3. Beat milk, flour, eggs into a thin creamy batter 4. Toss butter in skillet, spread around, and add batter and fruit 5. Bake 20ish minutes

Scrambled eggs with diced onion and spam on a hot corn tortilla, a bit of cheese, and a bunch of hot sauce.
Tres Jolie!

Citrus pork carnitas tonight. Made some rather heated pico de gallo (proper jalapenos for a change), sliced an avocado, tortillas and seasoned whole pinto beans. Washed it all down with a Kokanee beer.

that sounds great Ed. In Miami, I can get some righteous carnitas. Really like what you served with 'em. Not familiar with that beer though.

Venison Stew. I had some loin from the 2016 harvest left, so I made Venison Stew tonight. Cut the meat into 1/2 dice, and dredged it in seasoned flour. Using a cast iron Dutch Oven, I browned Venison in lard. Stock was added, some red Currant jelly, taters, carrots, onions, garlic and seasoned with French Thyme. A wee bit of my Tabasco pepper sauce, and a number of hours of simmering. Meat was tender, veggies still with a bit of firmness, the liquid nicely flavored and thickened.
