Westman, once you have the gold standard all else must attempt to measure up to that level. It is good you tried mine first, this way you have set the bar of exelance that all others must attempt, but usually fail to measure up to. Now Sitka's recipie is a fine one for a fast food soup, probably none better, but stew....I am afraid you may be disapointed, so just stick with mine and fear not the dissapointment of an expectation not met. But if at all possibe try Sitka's reciepe for Cornish game hens...it's great. Did four birds yesterday and I'm sold. don't think I can improve on this but I am willing to try...and try....and try.

sse,

I grew up in the Seattle area and still have relatives living there. An Aunt of mine from Port Townsend shipped me a batch.

I have seafood shipped that way from time to time. It is expensive, but darn well worth it. I get a craving for Dungeness crab that won't quit until I drop the cash...

Sitka I think next time I will try boiling the birds before smoking this will undoubtly improve them Boiling fixes most everything.

Boily
I guess if your taste buds have been ruined enough to accept boiled oyster stew, a boiled bird might be next... tsk tsk tsk...
