Fry up some bacon. Fry up some onion in the bacon fat. Slice the heart thin and drop it in the bacon fat for about 10 seconds on each side...and eat.

Us guys who keep stuff like hearts and livers are known as gut pile gourmets. There's some good eating in there. My wife calls it "beaks and feets" night.

I usually toss all the organs but do have a friend who makes me keep the liver if he is hunting with me .

Neither the "liver blisters" nor the flukes render the liver inedible. Flukes fully encapsulate and you can cut around the capsules and discard them. I have heard that, but I don't need a deer liver that badly. I'll stick to the clean ones!
