Potato and Sausage bake with extra Tony's seasoning. I used more potato's than the recipe called for but I had some that I needed to use. I guess we all know what I'll be eating for the next few days. Tastes good though so I don't care.

Last night was spent wrapping up the Dallas Safari Club show with my youngest son Tony. Dinner at Bob's Steak and Chop House, he a dry aged bone in rib eye and me a Wagyu tenderloin. We shared creamed spinach, hash browns and mushrooms. It was killer.
Conduct is the best proof of character.

Deer steaks, garlic mashed potatoes and green beans.
I cooked the steaks in a iron pan with a little olive oil to sear them.
Then crushed some garlic cloves and tossed em in with some butter.
Was pretty good.
Over cooked the deer....but I have not cooked deer for a long time.

I'll make those corrections next time.

We had leftover mashed potatoes and Mac and cheese.
Cleaned up a cabbage that was getting old.....been cutting some off of it now and again for three months.
Cut some chops off a whole pork loin and fried them. My favorite way to eat chops.
Made some room in the fridge.

I made cheese and bean enchiladas with Spanish rice on the side. My first try at Spanish rice.....it was "ok" but I've had better. The enchiladas were killer though. ETA.....I ended up with eight of em and I don't want to eat the same thing for the next seven days so I'm going to freeze some if I can figure out how but they won't fit in any of the containers I own. I'm thinking about trying to get a few in a 1 gallon zip lock without damaging them. Any other suggestions? Tin foil maybe?

Wrap and freeze. The parchment will keep it from sticking and can be baked, so just take it from freezer, right back to oven. The question I have is why there are 7 left. EZ Yam Chowder
Brown 1 lb of ground meat (I use turkey) in a little olive oil with some garlic. Season with salt, pepper, poultry seasoning (for the turkey). Add a large can of condensed cream of mushroom soup and and stir in an equal amount of water. Drain and add a large can of yams cut into bite size pieces. When that is sufficiently heated add a couple ounces of shredded extra sharp cheddar plus a few tablespoons of grated Parmesan.
Serve when the cheese is thoroughly combined. Bon appetit!

LOL.....One + the rice was all I could get down. They're pretty big. I don't have any parchiment paper but I'm going to the grocery store in a little while....I'll see if they have any. I think I'll pick up some Zataran Spanish rice while I'm there. Mine didn't come out so well. The dogs are ok with it though.

I am not a very good Spanish rice mechanic. Zatarans is what I use.
Mom makes some great rice.....no recipe or anything.
We had another leftover extravaganza last night.
Strip steak, deer chops, blackened(sorta) tuna and mashed taters.
I cooked the beef and deer in butter.
The tuna was cooked to a medium rare in a little olive oil, but seasoned first with cajun seasoning.
They ate it up fine.
