I buy pork butts when they are on sale for $.99 a pound. Take out the one small bone, grind them up ^^^^^^ This. I make my own sausage also. This year I went out of state for Christmas to see family. Took all of my gear with. I made 40 lbs of breakfast sausage, and 35 lbs of Bratwurst. I gave it out to my siblings and youngest daughter. They all loved it so much that I left the equipment there so that they could make a few batch's on their own. AND... In addition, I made up 25 lbs of sauerkraut for them too. It should be ready the first weekend of Feb.

Just finished casing up 117# of 5 kinds of sausage, consisting of venison/pork at 50/50. Eileen Clarkes Bright Eyed Breakfast sausage recipe was the single largest batch. That recipe alone justifies buying her book. Been making it for 4 or 5 years now. Made 200# last year, all consumed by last Nov.

Not a traditional breakfast sausage, but I like chorizo for breakfast. I use a recipe one of the members poster here a few years back and have tweaked it a bit to taste and use 50/50 pork and beef. The only breakfast sausages I don't like are the english style ones they serve at work. I don't know how you f up a sausage, but somebody has managed.

Jimmy Dean works for me. I like to mix the regular and hot versions together 50/50.

I'm sure there's still some Basko's turning out good Chorizo in So. ID just like there are in No. NV but No. central ID's a barren wasteland when it comes to Chorizo......or just about anything more exotic than a pork chop. Around here Wall Mart's considered a specialty shop.
