My main deer rifle is a Sako 85 Black Bear with a Leupold VX-5 HD 2-10X42. There is absolutely no ejection problems nor is there any with the many Sako 85 Finnlights and other Sako 85's (.308 action length) in my area.
The VX-5 has given great service and tracks well. There is no closed deer hunting season in my country as they're considered pests by the Government Dept. of Conservation. Consequently my .308 and Tikka TX3 Lite 6.5 Creedmoor with Leupold VX-3i 3.5-10x40 get to go hunting a lot.
Stick to your original idea and you won't go wrong. The new Sako 85 Finnlight II .308 or 7mm/08 would be worth considering too.
