We had Cowboy Kent Rollins poor man's lobster tonight.
It was good.....fine job Kent.
It actually took some doing....finding cod cheap enough to cook.
One joint we tried had cod at 40 bucks a pound! Schit...might as well have regular lobster at that price.

Made some of his poor mans lobster last week.
Had it as Fish and Chips tonight, though with fresh made onion rings instead of chips.

Dinner was at a neighbors tonight. Braised beef short ribs from a local ranch, roasted potatoes, asparagus and a mixed greens salad. Well done.

Thanks for posting this. I've got several neck roasts that I've been kicking around low and slow ideas for, but think I will try this with one of them. Shaw uses a shoulder roast in the recipe and I found a neck roast took about an hour longer. I cooked mine in an enameled dutch oven in a 300 degree oven rather than a crockpot, roast wouldn't fit in the crockpot. I also browned the roast on all sides first (habit). I used two chipotle peppers in adobo sauce (my wife freezes them individually). It was spicy and had some heat but not over the top. Using 4 peppers would have been hotter than I like. I went pure trailer trash.......fried some smoked cheese sausage and chunked em up in a batch of Velvetta mac&cheese with a can of smashed whole tomato's.....washed it down with a PBR....
I plan to leave the door ajar tonight so the dogs can get out if I die in my sleep of a heart attack.
