You gotta have Frank's and maybe Sriracha. Tried another good one the other night that would be a good addition once you have the bare minimum of Franks and Sriracha covered - Tiki Bob's Scorpion. For me Frank's isn't hot enough, but I don't need crazy. The majority of my hot sauce consumption is from the regular Tabasco, Crystal, Louisiana gang.

Recently discovered Nando's Peri Peri sauce. Really different taste. Get the "hot" version of course. Had some on my quesadilla yesterday! Sister sent me a bottle last year. Went through that one quick, found a bigger bottle at the bigger grocery in the bigger town up the road when I was there last week. Like others, can't say it's my "favorite". Right now there's that on the counter, a bottle of Red Tabasco, remnants of Salsa Bufalo chipotle, some hot toasted chile de arbol oil (my homemade version and some from a Mexican joint that went out of business) in the fridge. Then, that big store had cans of Herdez on sale so I bought a half dozen each of Ranchera, Casera, and Verde. One might say I love hot sauce, dried peppers, fresh peppers etc as there's always some nearby. One thing I can say, I'm not a fan of the garlic or green Tabasco products. Geno

I'm also years past the "hotter is better" age. For absolute deep rich flavor, the best is Arizona Gunslinger, made with sun-ripe red jalapenos. It is thicker than the vinegar-based ones like Tabasco, and a dark red-brown in color. Magnificent. It is hard to find, but you can order it directly. LINKMy current Fave is Crystal, which is the "New Orleans Alternative" to Tabasco. I think it is more flavorful than Tabasco, and less vinegary. It also costs about 10¢ an ounce compared to 45¢ for Tabasco. Hard to beat that. But I also thoroughly enjoy Franks, Tapatio, Cholula, Lousiana, Sriracha, and a bunch of others. Tip to the wise: Try some Arizona Gunslinger (or your fave) on potato salad. Heavenly.

I have about 8 different bottles of Pex Peppers sauces in the fridge right now. Good stuff with awesome flavor. I have about 40 or so bottles on standby in the cupboard. I stocked up to save on shipping, and I give a lot of them away to friends.

Favorite, as in singular? No such thing for me. I have at least a 1/2 dozen and home and an equal number I enjoy at restaurants.
Tobasco regular, chipotle and garlic are good Tapatio Franks Sriracha Hung Fong garlic chilli Cholula El Yucateco
I'm probably forgetting a few.

Re the green jalapeno sauces. The one thing I've found they really work on is hard-boiled eggs. Oddly, not as well on regular fried eggs. But on hard-boiled, it is really good.
The heavily garlic ones like Sriracha also have more limited uses than a straight hot sauce. But in those uses, they're a natural. Spaghetti Marinara is one such use. On a chili dog is another.

A related goodie that I got for Xmas was some "Spicy Chili Bacon Jam". I'm not big on jelly/jam, but this stuff was great. Pepper jelly/jam is a another whole area to enjoy the heat, especially with bacon bits in it!

The one with the round wood cap. Cholula? Good chit. Absolutely.....Chipotle flavor, a little bite with flavor. Can't stand the ones with the overpowering vinegar taste.

Michigan made Billy Bones Hog's Breath . Good flavor with a touch of heat. Red ripe jalapeno , vinegar and salt....simple as that.

In Texas most restaurants had little green peppers in a shaker bottle filled with vinegar. Hot, but more zippy than hot. A little mild for chili but just right for eggs.
