I will be smoking both racks of ribs and a hind roast tomorrow. I started cutting up the Water Buffalo and just ate some rare tenderloin. It too is great. Why are all the buffalo I see hunts for in the US of the river type? It would seem that the swamp type with there long sweeping horns would have more trophy appeal.
