I ate one of the Tenderloins today. Its outstanding. Even the wife liked it and she is not the biggest meat fan.

The pig is fantastic. I will be smoking both racks of ribs and a hind roast tomorrow. I started cutting up the Water Buffalo and just ate some rare tenderloin. It too is great. When I smoke the pork I will smoke a Water Buffalo Brisket as well.

I think better. You can't beat pork and beef. Corn fed venison is great too. Don't get me wrong.

This morning I put a roast from the hog and some beef brisket in the smoker. Only 12 hours to go.

The euro mount for the water buffalo skull is coming along nicely. I do not have a pot large enough for such a big skull so Im using warm water maceration. Its a slow process.

While I was making a 30 Lb. batch of Water Buffalo jerky, I put the finishing touches on the Whitened Skull.

A little off topic but something I've always wondered. Why are all the buffalo I see hunts for in the US of the river type? It would seem that the swamp type with there long sweeping horns would have more trophy appeal.

Good question. It wansnt until I heard of this opportunity that looked into all the breeds of water buffalo. I never knew there were so many strains.

Wow, wish I could shoot a couple of bovines on guided, fenced hunts.
