I pulled these from the pdf:
Item No. 1173 - Beef Loin, Porterhouse Steak - The steaks shall be prepared from any IMPS short loin item. The maximum width of the tenderloin shall be at least 1.25 inches (3.2 cm) when measured parallel to the length of the back bone.
Item No. 1174 - Beef Loin, T- Bone Steak - The steaks shall be prepared from any IMPS short loin item. The maximum width of the tenderloin shall be at least ½-inch (13 mm) when measured parallel to the length of the back bone.
That 1.25" isn't the thickness of the Porterhouse, it's the width of the tenderloin as I mentioned earlier.

Well I didn’t get my tape measure out, but it was pounds, more than an inch thick, and yes, salt and pepper.
It was also delicious and rare. Six minutes total cook, ( pan was a smokin with a avacodo oil ) ten minutes rest.

I was lucky. Pops worked for a Anheuser Distributor and got two free suitcases a month. He donated them to the cause back then.

I didn't have the nerve to put "Saucy" in the name of the dish in my post...... Polenta is a fancy way of saying grits.....probably thought up by the French.....or a Yankee. Truth is they're both cornmeal. I mentioned that in a post a couple weeks ago but you're so busy farming you probably missed it.

Well, I have been trying to educate myself.
I looked up polenta....and grits.
Totally foreign up here.
My Googling brought me around to some kind of Hominy and pork soup that is popular in Mexico.........I forget the name.
Sounded pretty good.
If all you did with Al Gore's internet was to look around and find new and exciting foods to try, your time would not be ill spent.
