Bacon, lettuce, and garden tomato sandwiches, garden cucumbers with some green onions cut into them and seasoned with salt and pepper.

Ran out if tomatillo salsa as the meat wasn't thawed for dinner tonight, sooooo....

I ate it with a spoon last night....

I miss my mother-in-law's tortillas. While I lived around her in the Colorado high country they were always perfect.. always. Made on a coal stove and the ones not eaten immediately were wrapped in a cloth... if they lasted that long. She couldn't really tell you how to make them with precision but she could show you. Hand full of this and a pinch or two of that and there you go. Perfect. No telling how many thousands she made through the years. Had my wife Mercy lived she might have gotten to the level of her mother. Miss you Teresa.

Number three daughter heading back to college tomorrow so my Parents wanted to take her to late lunch. Went to an old family favorite since the 1970’s Pops is friends with the family that owns the place. It’s Italian comfort food at its finest.

You won’t find any fancy shmancy dishes here. Lots of sauce, meat, fat and alcohol.

Want an arugula salad? HA! WTF is that would be the answer. Anyway here’s a few pics I took from the yelp site as I was to drunk to remember to take any. HA!

Boudin breaded with cracker crumbs and fried.....stewed tomato's with Zucchini from the garden.

I cooked and ground the Boudin today and was letting it rest in the fridge overnight before stuffing it in casings but I got anxious and fried up a patty for dinner. It was delicious.
I'll post pix tomorrow. There's fixing to be some jealous coon asses around here.

Sure....

Good masa harana and warm water, 2-1.5 ratio plus pinch of salt. Form to dryish small balls that still hold together adding water/masa as needed. Rest for one hour. Press in tortilla press, grill over piping hot cast iron.
