A sorta go to for any clam is just cover them with water in a big pot and boil/steam them just until the shells open up and get them off the heat right away. I used to make chowder with the left over liquid with all that nice clam nectar in it. Bigger deal though is getting bits of sand out of them first by soaking them one way or another. They're constantly sucking water in and out that's how bits of sand get there and that's how you can flush it out easy.

Sam, I clean em whole so they're 1 piece, digger, neck, pussylips all together, roll in flower, dredge in egg, then roll in panko, then fry.... amazing.....

I've dug truckloads of softshell clams back in Maine. We would put them in a crate, usually a lobster trap that had been shut off, and let them hang off a dock for a couple of days. That worked out the grit real good. Some guys would just put them in a 5 gallon bucket and add some corn meal to the water. The clams would pull in the meal and move the grit out. Seemed like a waste of meal to me. We also dug hen clams, kinda like a big quahog I guess. They were about 10" across, thick shelled, and real meaty. Had to go after them on a big minus tide. Those got cut up and cleaned, then chopped up real small and made into clam fritters. Damn they were good with a proper cocktail.

They are sitting in the cooler in ocean water cleaning themselves out right now. Nice and cold and in the morning they get a cleaning.

Those orange ones are the best. They are a bit sweeter. When I lived in Maine I would go down to the docks and meet some friends that were coming in from dragging. Pick up a pound or two of fresh scallops and eat them raw, washed down with a cold six pack. If you have to cook them you just want to skip them across the pan!
