I'm calling this version The Loaded Chile Relleno Casserole"
It was hot and waiting for my daughter and me who went to work with me while home for springbreak.
Ok I'm waiting for the wife to tell the recipe to my daughter who will write it down and Ill post a picture of it.
I tried this last year and she never gave it up. This casserole is slightly different than the one last year.
Wife takes the " From my cold dead hands" approach to her recipes.
Fat, I'm now obsessed with finding a good recipe for chili relleno casserole. Been on the Google machine and have found some promising leads. Did yours have meat? I would like to put in some ground elk to "heavy" mine up a bit, realizing that is non-traditional.
The last of the WONDERFUL meatball/marina sauce over freshly prepared spaghetti, that my friend Anne left me to eat while I was housesitting for her.
Fyi, as good of a cook as she actually IS, Anne cannot hold a candle to my Darla (NOT surprising, as Darla IS a 1st generation Sicilian-American, a GREAT cook & raised by her Sicilian grandmother) in cooking Southern Italian/Sicilian food.

The pic doesn't do the food justice. They look more "browned" than they were. Wife dipped the thighs, skin on, in balsamic vinegar wash before dredging them a panko, flour, thyme, salt, pepper and fresh rosemary coating. Then a tad more balsamic on top.
