Denny, iirc, it is part of the bottom sirloin primal ?!?
If your from Australia, it's part of the rump primal. Primal ? Large sections of the animal butchers turn into named cuts. Mostly "box" meat here rather than swinging meat. I'll ask my butcher about getting a small piece after consulting endless hours of YT vids. Can Denny turn a wonderful cut of meat into cinders,.......... ??? ,

If you got a Beef you probably got tritip(s), as stew meat.
The six in my freezer were 2.49lb Choice untrimmed.
That’s a great price. Gotta age them at least a month. If you watch Costco you can score Prime tritip cheap. I still age them a month also if I can. A tritip is the bottom triangular cut from the bottom sirloin. Must be cooked rare to medium rare or it’s just a sin!!

Ive seen that a few times on different cuts from Costco where for whatever reason highly marbled prime cuts are sold at the choice price. However several years ago Costco started blade tenderizing most of their usda prime cuts. So I won't buy them anymore unless I find they haven't been microknife tenderized. Thats not good for cooking to a Rare-MedRare. When I have the time I only let them sit in the fridge about a week. Its really about how you cook and cut it to get a tender juicy flavorful product.

I suspect its because there is a significant percentage of people on the dole around here, try to get them in the doors for those dollars. Fuggin piker.... Costco man! COSTCO! I sacrifice plenty of money on the alter of Costco. I was just kidding. I have never darkened the door at a Costco.

Fried pork chops tonight!
Sliced fairly thin, then pounded a bit thinner. 1/2 panko, 1/2 flour, Tony’s, and some egg wash before a baptism in hot grease.
Oh lord, swine is so divine. I’d likely be blowing schit up too if I had to abstain from that magical animal that brings forth ham, pork, and bacon...
