We ate big at noon (Chinese buffet), so supper was quite minimal. I had a sandwich comprised of two slices of white bread, a couple of slices of chopped ham and four slices of hard salami with baked beans in the middle. A couple of radishes, a few green olives, and a glass of milk rounded out the repast.

Broccoli Cheddar soup tonight.

I usually make my stand by with potato's but someone posted about the traditional version the other day so I thought I'd try some.

It was pretty good but I think I'll stick with what I know.

I used this recipe.

https://www.allrecipes.com/recipe/235874/copycat-panera-broccoli-cheddar-soup/

I normally use this one.....they're pretty similar cept for the potato's.

Made a pot of peas and rice.

A few links of double smoked sausage diced up and fried in a big deep skillet. Add in a diced onion, diced grn bell pepper, couple stalks of celery, and a few cloves of garlic. Season with a bit of Tony’s creole and sauté it all up for 10 minutes or so. Add 2 or 3 cans of black eyed peas.

Make a pot of rice with chicken stock, a bay leaf, and a bunch of thyme.

When rice is done, add it into the pea mix until it looks right to ya. I like to add a bit more stock and simmer a bit. Kick it up with some cayenne if you’re so inclined. I chop a bunch of green onion to add at the end as well.
