Sounds good.

Never had an oyster before.

Last time I was in NZ the oysters were not in season.

I like to put them on a hot grill or on rocks around the fire. Just a few minutes and they’ll just start to open. Shot of Tabasco and a squeeze of lime. Cold beer.

Perfect.

I like them raw as well, but only enjoy maybe a half dozen them I’m done. Move on to the grill.

Love me some fried oysters used to collect them off the beach 10 minutes from home at the time. Sounds like the ol egg wash is the tried and true here that's what I did too. Bit of butter in a pan on medium heat. Dip the oyster in egg roll it in flower cracker mix plop it in the pan. Underdone is 100 times better than over done. Make sure to hit it with fresh lemon after flipping it the first time and a shot of cracked pepper. Talkin a 10 minute deal here tops.

I sat at SMACKNALLY's quite a bit while I was there. We stayed across the road at the Anchorage Inn.

I'd go over and see Captain Steve come in every afternoon. He's taken me fishing a few times. I didn't feel like a day out on the Gulf Stream this trip.

I was sorely tempted. He needed one more guy to fill his roster and offered me an all day trip out in the Gulf Stream for $300. But I just wasn't feeling up to it at the time. It was hot and I was not feeling up to par.

I have two oyster farms in my territory. When I get a hankering I hit the source, watch them shuck a quart for me, then take them home to mama for her Cajun oyster magic.

I'll eat them any which way. Shucked a couple hundred last year and ate them any way you can think of but my favorite was a breakfast egg scramble the wife made. Eggs, fresh gulf oysters, mushrooms, diced green onions, and white cheddar cheese on top. Ate it with toast. Delicious

Beautiful boat.

I really like the Carolina style boats but some get a bit carried away with the broken shear and exaggerated flare. That one looks about right.

By far the most exquisite fried oysters I've ever had. Brought back from Hokkaido after hunting Japanese sika stags. Prepared by my wife's grandma the same way she was taught how in the late 1940s.
