Two 1lb bags lentils, one yellow one red.
Two lrg chopped yellow onions
One and half large bunch collard greens chopped minus center rib.
8 ounces mushrooms sliced
Lrg can whole plum tomatoes
1 can tomato paste
1lb basil garlic sausage sliced
1lb kielbasa sliced
7 carrots diced
64oz chicken broth

Caramelize mushrooms and onions separate skillet in EVOO.
Diced carrots and wilt chopped greens in bottom stock pot in a little EVOO and cup of stock.
Pour lentils, all stock, mushrooms, onions into pot with carrots, greens.
Simmer med/low until carrots are soft and lentils are hydrated, couple two three hours.
Brown sliced sausage in skillet add to soup.
Brown small can tomato paste in sausage fat left in skillet add to pot.
Add tomatoes to pot after squishing in hand, careful for flying juice, add juice left in can.
Simmer another couple hours. Salt and pepper to taste hour or so before done simmering.
Add little water if becoming too thick. More liquid for soup, less liquid for stew.
Grated Asiago and chopped fresh Italian basil for garnish. Sour cream garnish if stew consistency.

A sprig or two of fresh thyme can be added if you like while simmering then removed before serving. As well a table spoon or two of cider vinegar when adding tomatoes. Cup or two of your favorite drinking white wine as well if you like.

Other than that all the flavor you need come from all the added ingredients as well as browning of certain item described above.

Crusty sourdough bread with butter mandatory accoutrement.

So, if you ever have an old can of cheap sardines, that's been bouncing around in the truck for a year or two, you may not want to count on it being viable.... I switched gears and went for PB&J samichs instead.

FatCity (or anybody familiar with collard greens!):
I can't get collard greens here in Sweden, but I sure like the looks of this dish and I'd like to try it.

Any suggestions on what (if anything) I could try as a substitute for collard greens? Kale perhaps?

I've never eaten collard greens, so I need a little help here!

Please: nobody suggest lutefisk as an easily-available substitute -- I wasn't born yesterday! sick grin

Wouldn't matter if the can of cat food had been bouncing around in the truck for a year or two or if it was just purchased; I'll still take the PB&J.

John Im not a big kale fan so i would probably use Swiss Chard and toss it in pot later in the process as it breaks down quicker. You could also use the ribs of Swiss Chard and it comes in colors.

Mustard/turnip/kale/chard......

Theure all good. Kale might take a bit more simmering. Especially the italian black variety.

Dang it......I could have used that Boomer.

I've got a pesky Coon I'm trying to catch and "relocate" right now. Both the Cat Food or Marsh Mellows are a no go so far but that old can of Sardines just might have been the ticket. Check under the seat and see if you have a few more of those floating around in there.

Did this tonight. Was great. Did order of recipe a but different but turned out well. Thanks for posting.
