Boomers figure if you did it would only be if Mom brought them down to the basement for you, already buttered with syrup on them. Maybe even cut up into bite sized pieces too.

Boomer morning here. Made some sourdough volkkornbröt last night.

Had some leftover starter so I made up some pancake batter for this morning's use. Whole wheat, some oats, rye flour, buckwheat flour, and best of all some wheat berries from a farm over the hill and some buckwheat groats.

After letting it work overnight I added a bit of regular flour, some salt and oil, and got ready to rock and roll:

Had my plate ready, neighbor rancher is a potter too, glaze is local rhyolite he ground up, cottonwood leaf from his yard. He's a boomer, lotta work doing all that on top of ranching (not something a millenial can relate to) :

Dang bit of work for a really tasty loaf of bread and some hotcakes.........................but that's what we boomers do for enjoyment even.............work.

I love the taste, just have to use a little to get the flavor. Bread is really dense if you just use it and no regular or bread flour. Same with griddle cakes.

OK, but realize I just use it as a guideline. This version doesn't include sourdough starter, which in the form I use is about 50/50 flour and water. So I add a cup of starter and subtract a half cup flour and a half cup water from the recipe. I like buckwheat so I use a 12/ cup instead of a 1/4 cup of buckwheat flour and then cut back on the regular flour. No wheat germ so I used oat bran. I worked for over 10 years in the commercial (Wonder Bread) baking industry so I know what a good dough is supposed to look and taste like. I do a lot of adapting. The loaf I made last night didn't get any yeast added to the dough either as my sourdough had been working good, was fresh and pretty "hot". The rise turned out just about perfect. But, I'm just a boomer, what do I know wink

That's how I use recipes. I usually end up tweaking them to suit my taste. I have some sourdough starter in the fridge, er uh, Kelvinator, fridgadator or whatever you campfire misfits call it.
