Who doesn't know what a ditch is or a hot roast beef?
Everybody here knows what a ditch is, it's where you throw dead yankees. Grits were always breakfast food where I'm from but to tell the truth I prefer them for dinner in shrimp and grits as some others have mentioned. Dad did say that 37 was too old for jump school. That would be a treat, I was 35 when I went through SERE, there was a navy pilot there that was older than me. We hung together and made it to the collection point. He had a good sense of humor, for an ossifer. mike r

Had cheesy grits this morning at a diner. Had cheesy grits this past week right here at home.
I make the 30-minute kind. When they're about half done in the simmering water, I add a tablespoon or so of milk and some dried chives. I salt the water first, so all I need to add at the table are the shredded cheese and some pepper.
Grits are NOT a hot cereal, no matter how many uneducated Yankees say they are. They're a substitute for potatoes, and you dress them with the same things you'd dress hash browns - which does NOT include sugar. Stir in some cheese, or crumbled bacon, or butter, or green onions, some black pepper, or even a bit of garlic powder. But no damn sugar. I keep reading the "yankee" comment, gotta tell ya, sugar in grits doesn't sound good to me...made cheese and onion grits for lunch today(actually what prompted me to start this thread). Thanks for all the replies guys, I will be trying some of your suggestions(really like the chicken broth idea)...they are also really good mixed 1:2 with Pilsner malt and then boiled with some Cluster hops...

My father was frugal to put it mildly.
Our first trip south, before I-75 was built. Breakfast in a rural Georgia town. We all got grits on our plate. My father informed the waitress that we didn't order them & how much did they cost.
The waitress said; darlin this is Gawga, you get get grits whether you order them or not. Dey don't cost nothin.

Confessional: did something really stupid as a kid and got arrested. Got out after a short time but it changed my life forever and I really learned from that . They served us grits. I have never eaten them since and have never had the desire to either.

Grits, chitty hot dogs in tomato sauce, and watered down kool aid. Never forget. Really good shrimp and grits may be one of my favorite things in the world of food. Miller’s Seawall Grill in Galveston have the best I’ve ever eaten.

I've had boudin, it's not bad...if you're into that type of sausage, the best I've ever had was my great grandmother's homemade jaternice...nothing else comes close.

I usually like them cooked with a bit of milk added to the water.
Breakfast I usually go with just S&P and butter. Runny eggs are a given.
Dinner I might add some cheese. Parm and cheddar. Finishing them with some 1/2 and 1/2 makes the uber creamy.

I always cook them down to get the excess water out of them. My dad taught me to to eat them with eggs. Eggs over easy with buttered grits. Salt and pepper to taste. Mix it all up and enjoy. That's how I eat em too.

I first ate a grit at Jump school at Ft. Benning, it was then that I understood why the south lost the war. Fast forward >50 years and I had Pork Belly w/ cheese grits at Fleming's Steak House, if prepared properly they are OK but will never be a substitute for hash browns.
