It’s the best way to prepare elk and buck meat imo.

S&P raw steaks
Dredge in seasoned flour, ie; Johnny’s, slap yo momma etc
Dredge In beaten egg
Dredge in panko, bread crumbs, or even flour again.
Fry until you get the right color.

We had those last night Judman. I just season the meat then flour and put them on a rack in the fridge for the moisture to soak the flour. then flour again before frying.
