I have had better luck with dredging in flower then egg wash and Panco or Corn meal depending on what type I am making. The Panco seems to brown better for me.

I make Guy Fieri's jaeger schnitzel recipe with venison cutlets. It also uses Panko. I don't typically spend the time to make his mushroom gravy and just use store bought instead.

I put a generous dose of smoked paprika, salt, pepper and garlic powder in the flour mix and use a really good french mustard in the egg wash. We fry it in olive oil as his recipe calls for. Probably some of the best schnitzel I've ever had.

Chicken fried stk. is one of my favorites,,, Never made it at home though!! Might give it a try with this year’s venison.. Mostly give it away these days..
