You're always doing pork butts and stuff. You should try them sometime.

After doing the roasting/braising part, then shredding, crisping them up in some lard on that flattop of yours like they do in taco shops all over SoCal, whipping up (or purchasing) some decent pico de gallo or salsa verde, and maybe even going all out and making some homemade corn tortillas we might could see you becoming an honorary Mexican Eskimo.

I sure wish Stagg still made their beanless chili. Remember the beef stew they used to make? It was good.

Yes I do. Use to buy it for deer camp when it was still Stagg Foods before being sold to Hormel.

They all share the same Central Asian Haplogroups.

Narwhal Asada sounds mighty tasty.

I imagine a musk ox head cooked in pit would make for some great cabeza tacos too.

Walrus tripas...................maybe not so much??

from your wife's newest acquisition to the Ranch?

I never see mutton on the shelves. Lamb, expensive lamb, no mutton.

Which flavor Yucateco?

Not that it matters much, they'll all do the job

Dude, you going to have any grass to turn them out on at that time?

In case I forgot, good luck with them critters. Should be a fun experience.

Is it worth searching out or having the Holiday market bring into town?

I like them all but the Black label is my favorite of the bunch. Not as hot as some of the others and has a smokey quality.

Cool.

I do hope you post some pics or videos of the operation once it's up and running.
