Slavyanka requested more of the mussels with vermouth pasta I made the other day, so I’ll make that. Decided to add some pineapple cut calamari in...pineapple.

But SS15 doesn’t like seafood much so I’ve talked him into a Vietnamese-style vermicelli with some pork belly and fish sauce that I made up last night. Got an obligatory “it’s OK”, but he hoovered the whole batch.

Slavyanka wanted homemade bread again, and since I was firing up the Kamado to do a chicken, I decided to do it on there.

Bread didn’t rise as well as I’d have liked because it was pissing rain today, but it came out well enough. No smokiness to it, though. Didn’t have a smoke log on the bbq until I put the chicken on. Then I used some green apple wood. Got a little darker than usual, but the flavour was fine. Nice and juicy.

A year ago in Dublin I found “deviled lambs kidneys” on a menu and had to have it. It was fantastic. Been waiting to try ia recipe myself with wild game and made it happen last night

Antelope kidneys:

Further diced and seared in bacon fat, paprika, salt, pepper, English mustard and then got a flambé going with scotch whiskey (unpeated). Add mushrooms and cream and reduce:

Jim it was kinda like the mushrooms. Not chalky or pasty like liver can be but also not as firm or chewy as meat

I've had elk kidney once, it was seared in over a fire. Not horrible but probably wasn't soaked long enough, had a metallic aftertaste.

Haha Jim. Yeah TRunner I’ve messed around with elk kidneys with very mixed results. I think the deviled kidney route is the way to go

I used this recipe more or less but added mushrooms
